First Birthday!!

This post is a little late going up.  But last month we celebrated our Bub’s first birthday.

Unsurprisingly, we’ve been busy.  So getting pictures up took a little longer than I would have liked.

But on to the show!

There were presents.  And Bub loved them, so did his sister, SweetPea 🙂 .  But even better than presents were chocolate cupcakes.  With pink frosting, of course.  And yes, SweetPea did pick out both the flavor of the cupcakes AND the color of the frosting.  Bub can pick those things next year, you know, when he’s talking.

This next picture proves that Bub is related to my husband.  He does the same thing whenever he eats chocolate.  Or spaghetti for that matter.  That’s actually not true, he’s a bit of freak about getting food on his hands and face.

Double Duty Peanut Butter Chocolate Cookies

I believe I mentioned my love of chocolate paired with peanut butter in a previous post.  And so it’s no surprise that I couldn’t pass up this little gem of a recipe.

And when I read that you made cookie dough balls of each of the batters (peanut butter and chocolate) then rolled those together I knew that this was a recipe my daughter HAD to help with.  Therefore, this became a family project (which we completed with a fantastic book…maybe you’ve heard of it, If You Give a Mouse a Cookie) and we had a fun day filled with reading and cookies.

Ingredients:

Chocolate Cookie Dough –
1/2 cup unsalted butter, room temp
1/2 cup sugar
1/2 cup brown sugar, packed
1 large egg
1 tsp vanilla extract
1 cup flour
1/2 cup plus 2 Tbsp unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
2 Tbsp milk
3/4 cup chocolate chips (the darker the better…at least in my opinion 🙂 )

Peanut Butter Cookie Dough –
1/2 cup unsalted butter, room temp
1/4 cup sugar
1/2 cup brown sugar, packed
1 large egg
3/4 cup peanut butter (creamy or crunchy)
1 tsp vanilla extract
1 cup plus 1/4 cups flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup chocolate chips (again, the darker the better)

Directions:

Chocolate Cookie Dough –

Cream the butter and sugars together.  Beat in egg and vanilla.
In a separate bowl, combine the cocoa, flour, baking soda, and salt.
Slowly add the flour mixture to the wet mixture.
Mix in the milk.
Fold in the chocolate chips.

Peanut Butter Cookie Dough –

Cream the butter and sugars together.  Beat in the peanut butter, egg, and vanilla.
In a separate bowl, combine the flour, baking soda, and salt.
Slowly add the flour mixture to the wet mixture.
Fold in the chocolate chips.

Chill both the doughs for at least 2 hours (I chilled mine overnight).
Roll the peanut butter dough and chocolate dough into small balls about a tablespoon of dough per ball.
Smoosh one peanut butter dough ball and one chocolate dough ball together, rolling them into one large ball.

Bake the cookies at 350 degrees for 6-8 minutes.  They’ll still look raw, but a quick of their bottom side should reveal a golden color.

I had a hankering for cookie dough for the past several hours.  Unfortunately, my willpower only held out a few hours.  Fortunately, I had a handy little recipe to satisfy this craving.

I blame pregnancy.  I mean, cravings are more intense and willpower is weaker…so needless to say, I made some eggless cookie dough (you know, salmonella risk and pregnancy not a good combo).

This is not healthy, but it is delicious!

Ingredients:

1/4 cup butter
1/2 cup brown sugar
1/8 tsp salt
1/4 tsp vanilla extract
1 cup flour
3 Tbsp milk
1/2 cup chocolate chips

Directions:

Cream together butter and brown sugar.

Mix in salt and vanilla extract.

Mix in flour, 1/4 cup at a time.

Mix in milk.

Fold in chocolate chips.

Eat!

This makes about 1.5 cups of deliciousness.  Which is hard to consume in one day…even for a gal who’s 39 weeks pregnant.  Fortunately, it stays good in the fridge for several days…don’t ask me how many days, it never lasts more than four in my fridge 🙂

I’m thinking that future recipes of this sort might involve peanut butter and possibly oats…we’ll see!

Chocolate Banana Bread

Now I like banana bread.  And I especially like banana bread when it has chocolate chips in it.  How could you possibly beat a recipe that is chocolate chocolate banana bread?  That’s right, you can’t.

I found this recipe here and couldn’t resist making it.  Especially as fall approaches.  The days are still pretty warm around these parts, but the nights are cooling into those crisp fall nights that give the perfect goosebumps…just thinking about those nights makes me want to bake apples or make pumpkin cookies…I guess we know what’s going to pop up soon on this blog…but anyways.  Cool nights just beg for warm baked goods and hence this banana bread was baked.

I actually baked this early in the morning.  Why?  Because I’m pregnant and that makes sleep elusive.  So instead of laying in bed hoping to fall back asleep I got up and started baking.

Ingredients:

1 cup sugar
2 eggs
1/3 cup applesauce
3 mashed bananas
1 tsp vanilla extract
1.5 cups flour
1/2 cup baking cocoa
1 tsp baking soda
1/2 tsp salt
1 cup semi sweet chocolate chips

Directions:

Preheat oven to 350 degrees.

Spray bottom of 8×4 inch loaf pan with cooking spray.

In large bowl, beat sugar, eggs, and applesauce.  Beat in banana and vanilla.

Combine flour, cocoa, baking soda, and salt.

Mix flour mixture into banana mixture until just combined.

Fold in chocolate chips.

Spoon batter into pan.  Bake about 1 hour or until toothpick inserted into center comes out clean.

Cool for 10 minutes.  Remove from pan; cool completely on wire rack.

Enjoy.  Enjoy with vanilla ice cream.  Or on it’s own.  Or as a ridiculously decadent and chocolately french toast.  Or on it’s own.

Chocolate Chip Cookie Dough Balls

I found this recipe quite a while ago.  The first thing I did was send it to my best friend, Katie*, because she eats cookie dough for most meals.  So I figured this recipe would be right up her alley.

*Names have not been changed because honestly, how many Katie’s do you know?  If I was going to change her name, it would have been to a really common name…probably Katie.

Then I forgot about the recipe.  Oh sure, I’d see it on my Pinterest board, but I never really thought about making it.  Until this week, when SweetPea and were playing with playdoh.  And I thought, maybe, just maybe, SweetPea might want to help me make this recipe…she could roll the dough into balls.  It would be perfect.

Unfortunately, SweetPea didn’t help with this recipe.  She was 1) too busy having a second breakfast and 2) as soon as I touched the dough I knew it would be too messy for her delicate sensibilities (she’s a bit of a neat freak).

However, I thought the recipe turned out delicious (and I took pictures of the process), which made it an ideal candidate for this blog.

Ingredients:

2/3 cup raw cashews
1/3 cup oats
1.5 Tbsp honey
2 tsp maple syrup
1 tsp vanilla extract
1/4 cup mini chocolate chips (trust me, the smaller the morsels the better the end product…and also this is one instance where more is not better)

Directions:

Process cashews and oats in food processor until they’re a fine powder.  Be careful not to over blend or you will make cashew butter, which isn’t a bad thing…but not what we want for this recipe.

Add honey, maple syrup, and vanilla.  Mix until combined.

Add chocolate chips.  Mix until combined.

Form into balls.  If the dough is too sticky to work with, chill it in the fridge or freezer for a bit (just not too long).  Place in refrigerator to harden and form.   Serve/share/eat/devour (whichever you prefer).
