I just made some spinach balls for my daughter. They were easy to make, my daughter liked chewing on them, healthy, and I liked they way they tasted!

They might not be the prettiest snack, but they sure taste good! The hardest part making them was rolling the spinach into the little balls, but the effort was well worth it. You can store them in the fridge for a couple days or freeze them for up to two months (although I doubt I will be freezing them, hello new favorite Mom snack!)

They are super delicious! I think I’m going to make some adult ones, pretty much some bigger ones with a more flavorful cheese. But regardless, they are good as is. I also just made some kale chips (here’s the recipe: http://www.foodnetwork.com/recipes/melissa-darabian/crispy-kale-chips-recipe/index.html ) and they were ridiculously tasty. You should try them too!
Kale chips are among my favorites! I like to sprinkle mine with a little freshly grated Parmesan, too! Mmmmmmmm. So good.
